5 Minute Egg Salad with Bacon; Keto Friendly!

Egg salad is a surprisingly simple recipe that doesn’t require much work AT ALL!  I recommend buying the eggs pre-boiled, since they are only about $1 more than buying the eggs raw.  This is a great snack to keep in the fridge for when you are munchy.  I love to have a couple scoops with a bit of avocado on a lettuce wrap in the afternoon for a snack.  Works perfectly for those on the ketogenic diet who don’t want to make an egg salad sandwich.  I make this on a weekly basis for snacks and it take me about 5 minutes total.


  • 10 Boiled Eggs (purchase pre-boiled)
  • 1 cup mayo
  • 2 tablespoons of dijon mustard
  • 1 tablespoon sriracha
  • 4 strips of bacon
  • 1/2 cup of shredded carrots
  • salt, cayenne pepper and black pepper


  1. Chop boiled eggs (chop into pinky nail sized pieces) and toss into large mixing bowl
  2. Cook bacon in a pan until crispy, crush into small pieces and add to eggs
  3. Add Mayo, and dijon mustard to mixture and eggs/bacon until evenly disbursed among the eggs
  4. Shred one carrot and add to mixture
  5. Season with salt, pepper, cayenne pepper and sriracha to taste
